Ingredients

  • Oil (or water for oil-free)
  • Vegan beef or portobello mushrooms
  • Onion
  • Carrots
  • Celery
  • Garlic
  • All-purpose flour (or cornstarch)
  • Rutabaga
  • Potatoes
  • Green cabbage
  • Vegetable stock
  • Soy sauce (or Tamari)
  • Bay leaves
  • Fresh thyme and rosemary

Instructions

  1. Heat oil in a large Dutch oven over high heat.
  2. Sear vegan beef or mushrooms until golden, then set aside.
  3. Reduce heat to medium; cook onions, carrots, and celery until softened. Add garlic.
  4. Sprinkle flour and stir to coat; cook briefly to eliminate raw taste.
  5. Gradually add vegetable stock while stirring to avoid lumps.
  6. Mix in rutabaga, potatoes, cabbage, soy sauce, salt, pepper, sugar, herbs; stir well.
  7. Bring to a boil then reduce heat to medium-low; simmer uncovered for 45–50 minutes until potatoes are tender.
  8. Stir back in seared ingredients 10 minutes before serving.
