  • 500 g boneless, skinless chicken breast
  • 6 tablespoons cornstarch
  • 50 ml vegetable oil
  • 1 onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger
  • 2 cloves garlic
  • Pineapple pieces

Instructions

  1. Season the diced chicken with salt and pepper, then coat with cornstarch.
  2. Heat the vegetable oil in a frying pan over medium-high heat; fry the chicken until golden brown (5–7 minutes).
  3. Remove the chicken and sauté sliced onion and bell peppers in the same pan for about 3–4 minutes.
  4. In a bowl, mix ketchup, cider vinegar, brown sugar, soy sauce, ginger, garlic, and reserved pineapple juice; add to the pan with vegetables.
  5. Return the chicken to the pan along with drained pineapple pieces; stir to coat and heat for an additional 3–5 minutes.
