  • 400g pasta
  • 2 roasted corn cobs
  • 3 green onions
  • 1 shallot
  • 2 jalapeños
  • 1/2 cup cilantro
  • 1 cup cotija cheese
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 3 cloves garlic
  • Juice and zest of 1 lime
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt & pepper to taste

Instructions

  1. Roast corn in a frying pan with olive oil for about 10–15 minutes until golden. Remove kernels from cob.
  2. Boil salted water in a large pot and cook pasta until al dente. Drain and drizzle with olive oil.
  3. Chop green onions, shallot, garlic, jalapeño, and cilantro; crumble cotija cheese.
  4. In a mixing bowl, combine sour cream, mayonnaise, minced garlic, lime juice/zest, smoked paprika, chili powder, salt, and pepper. Mix well.
  5. In a large bowl, combine cooked pasta with roasted corn, chopped veggies, and dressing. Toss to coat.
