  • 4 tablespoons butter
  • 1 cup dark brown sugar
  • 2 eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • ½ cup butter (for caramel)
  • 2 cups brown sugar (for caramel)
  • 1 cup cream (35%) (for caramel)
  • 1 teaspoon kosher salt (for caramel)
  • whipped cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly butter an oven-safe casserole dish.
  2. In a bowl, combine chopped dates and baking soda. Scald the milk in a saucepan and pour it over the dates; set aside for about 15 minutes.
  3. Mix flour, baking powder, and salt in one bowl, while beating eggs in another. In a food processor, blend the eggs, dark brown sugar, butter, and vanilla until smooth. Gradually add dry ingredients and soaked dates until fully combined.
  4. Pour the batter into the prepared dish and bake for approximately 30 minutes until golden.
  5. For the caramel sauce, melt butter in a saucepan, stir in brown sugar and salt until dissolved. Add cream and simmer until thickened.
  6. Once baked, poke holes in the pudding and pour one-third of the caramel sauce over it to soak in.
  7. Let sit for 15 minutes before serving with extra caramel sauce and whipped cream.
