  • 1 ½ pounds red mini creamer potatoes
  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Parsley flakes for garnish

Instructions

  1. Preheat oven to 385°F (195°C).
  2. Line a baking sheet with parchment paper.
  3. Wash mini potatoes thoroughly and set aside.
  4. In a bowl, mix cold water with 2 tablespoons lemon juice.
  5. Carve skull faces into each potato using a paring knife and place in the lemon water.
  6. In another bowl, combine olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper.
  7. Drain carved potatoes and toss in the seasoning mixture until evenly coated.
  8. Place seasoned potatoes on the baking sheet, face side up, and bake for about 30 minutes until golden brown.
  9. Garnish with parsley flakes before serving.
