  • 1 cup hot coffee
  • 1/2 cup canola oil

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round pans and line with parchment paper.
  2. In a bowl, sift together flour, black cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, whisk together eggs, buttermilk, hot coffee, canola oil, and vanilla until combined.
  4. Gradually mix wet ingredients into dry ingredients until just blended.
  5. Pour batter into prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to a wire rack.
  7. For the compote, combine blackberries, sugar, lemon juice, zest, cinnamon stick, water, and cornstarch in a saucepan over medium heat until thickened.
  8. For frosting, beat cream cheese and butter until creamy; gradually add powdered sugar and black cocoa until smooth.
  9. Assemble the cake by layering one cake with blackberry compote and topping with the second layer followed by frosting.
