  • 2 pounds boneless skinless chicken breasts
  • 1 red bell pepper
  • ½ medium yellow onion
  • 2 cans quartered artichoke hearts
  • 2 cups baby spinach
  • ½ cup mayonnaise
  • 4 garlic cloves
  • 1 lemon
  • Dried oregano
  • Dried thyme
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the chicken into 1-inch pieces and place in a large mixing bowl.
  3. Add chopped bell pepper, onion, artichokes, spinach, and optional parmesan cheese.
  4. In a separate bowl, mix mayonnaise, minced garlic, lemon zest and juice, oregano, thyme, salt, and pepper.
  5. Pour the dressing over the chicken mixture and stir gently until combined.
  6. Transfer to a 9×13-inch baking pan and bake uncovered for 25 to 30 minutes or until chicken is cooked through.
