  • 1 chicken breast, cut into cubes
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp chili powder or cayenne
  • Salt & pepper to taste
  • 1 cucumber, sliced
  • 56 cherry tomatoes, halved
  • 2 tbsp red onion, chopped
  • 1 tbsp chopped mint or parsley
  • Squeeze of lemon juice
  • 1 cup cooked white rice
  • 1 avocado, sliced
  • 1 tbsp spicy mayo (mayo + sriracha mix)
  • Optional: baby spinach or mixed greens

Instructions

  1. Cook the Chicken: Toss chicken cubes with olive oil, paprika, garlic powder, chili powder, salt, and pepper. Heat a skillet over medium heat and cook chicken for about 5-6 minutes until browned and fully cooked.
  2. Make the Salad: In a mixing bowl, combine cucumber, cherry tomatoes, red onion, mint or parsley, lemon juice, salt, and pepper. Mix well and chill in the refrigerator.
  3. Assemble the Bowl: In a serving bowl, layer cooked white rice as the base. Add spinach or mixed greens if using. Top with grilled chicken cubes, avocado slices, and cucumber salad. Drizzle with spicy mayo and finish with cracked pepper.
