  • 3 tbsp toasted sesame oil
  • 3.5 oz shiitake mushrooms
  • 4 garlic cloves
  • 1 tbsp freshly grated ginger
  • 4 cups chicken broth (or vegetable)
  • 1 can (14 oz) unsweetened coconut milk
  • 9 oz instant ramen noodles
  • Optional toppings: boiled eggs, chili oil, sesame seeds, chives

Instructions

  1. Grate garlic and ginger; tear shiitake mushrooms.
  2. Heat 1 tbsp sesame oil in a large pot; cook shiitakes until crispy and brown.
  3. Add remaining sesame oil, garlic, and ginger; sauté until fragrant.
  4. Deglaze with chicken broth; bring to a boil.
  5. Stir in turmeric, brown sugar, soy sauce, fish sauce, red curry paste, sambal oelek, coconut milk, and lime juice.
  6. Cook instant ramen noodles in boiling broth for about 2 minutes or until tender.
  7. Serve topped with crispy shiitakes, boiled eggs cut in half, sesame seeds, chives, and chili oil.
