  • 1 ½ lbs boneless, skinless chicken thighs or breasts
  • 4 carrots, sliced
  • 3 potatoes, peeled and diced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tbsp tomato paste
  • Dried thyme and rosemary
  • Salt and pepper to taste

Instructions

  1. In the slow cooker, combine chicken, carrots, potatoes, celery, onion, garlic, thyme, rosemary, salt, pepper, tomato paste, and chicken broth. Stir well.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is cooked through.
  3. If desired for thickness, mix flour with water and add during the last 30 minutes of cooking.
  4. Add frozen peas in the last 15 minutes.
  5. Before serving, remove the bay leaf and enjoy hot.
