  • 12 oz penne pasta
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • Salt and pepper, to taste

Instructions

  1. Cook penne pasta in salted boiling water until al dente; reserve some pasta water before draining.
  2. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken until golden brown; add minced garlic during the last minute.
  4. Remove chicken and melt remaining butter in the skillet. Add garlic and sauté until fragrant.
  5. Pour in heavy cream and chicken broth; simmer for a few minutes before stirring in cream cheese until smooth.
  6. Add Velveeta, mozzarella, and Parmesan cheeses; stir until melted and creamy.
  7. Toss cooked penne with the sauce; use reserved pasta water as needed for consistency.
