  • 3 Tablespoons extra virgin olive oil
  • 3 lb boneless chuck roast
  • 1 teaspoon fine sea salt
  • 1 teaspoon freshly ground black pepper
  • 3 lbs yellow onions
  • 2 cloves garlic
  • 1 Tablespoon pure maple syrup
  • 1 Tablespoon all-purpose flour or gluten-free AP flour
  • 1 cup red apple vinegar or beef stock
  • 2 1/2 cups beef stock
  • 1 sprig fresh rosemary
  • 1 bay leaf

Instructions

  1. Preheat a Dutch oven over medium heat and add 1 tablespoon of olive oil. Season the chuck roast with salt and pepper.
  2. Sear the pot roast in the Dutch oven until browned on all sides (about 10-12 minutes). Transfer to a plate to rest.
  3. Use a food processor to slice the onions thinly, then cook them in the remaining olive oil until translucent (about 5 minutes).
  4. Reduce heat and caramelize onions for about 20 minutes until golden brown.
  5. Add garlic and maple syrup; cook for another 7-8 minutes.
  6. Sprinkle flour over onions, deglaze with apple vinegar, then stir in beef broth.
  7. Return the pot roast to the Dutch oven, ensuring it's covered by the onion mixture. Add rosemary and bay leaf.
  8. Cover and cook in a preheated oven at 300°F (150°C) for about 3 hours.
  9. Carefully shred the roast if desired and return it to the juices for another 30-45 minutes of cooking.
