  • 4 Mini Pumpkins or ramekins
  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar plus extra for topping
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, whisk together egg yolks and sugar until smooth. Gradually stir in heavy cream.
  3. Add pumpkin puree, vanilla extract, cinnamon, ginger, and salt; mix well.
  4. Pour custard into prepared ramekins or mini pumpkins until three-quarters full.
  5. Place in a baking dish filled with hot water halfway up the sides and bake for 30 minutes until set but slightly wobbly.
  6. Cool at room temperature, then refrigerate for at least two hours.
  7. Before serving, sprinkle sugar on top and caramelize with a kitchen torch until golden brown.
