  • 8 oz block cream cheese
  • ¼ cup granulated sugar
  • 1 large egg

Instructions

  1. Preheat your oven to 375°F (190°C) and line muffin pans with paper liners.
  2. In a large bowl, whisk together oil, sugar, and vanilla. Add pumpkin puree, eggs, and milk; mix until smooth.
  3. In another bowl, combine flour, baking soda, baking powder, salt, and pumpkin pie spice. Gradually add to the wet mixture until just combined.
  4. For the cream cheese filling, beat cream cheese and sugar until smooth. Mix in egg and vanilla until well blended.
