  • 2 cups canned pumpkin (not pie filling)
  • ⅔ cup brown sugar
  • ⅔ cup granulated sugar
  • 1 cup applesauce or canola oil
  • 3 eggs (room temperature)
  • 1 tablespoon vanilla extract
  • 1½ cups semi-sweet chocolate chips
  • ½ cup mini semi-sweet chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8×4 inch loaf pans and line bottoms with parchment paper.
  2. In a large bowl, whisk together flour, salt, baking powder, baking soda, and pumpkin pie spice.
  3. In another bowl, combine pumpkin, brown sugar, granulated sugar, applesauce (or oil), eggs, and vanilla until smooth.
  4. Gently stir the wet mixture into the dry ingredients until just moistened; do not overmix.
  5. Fold in chocolate chips and pour batter evenly into prepared pans.
  6. Bake for 50-55 minutes or until a toothpick inserted comes out clean.
  7. Cool in pans for 10 minutes before transferring to wire racks to cool completely.
