  • 3 tbsp granulated white sugar (for filling)
  • 1/2 tsp vanilla (for filling)
  • 1/4 cup granulated white sugar (for cookies)
  • 1/2 cup canned pumpkin puree
  • 1 3/4 cups all-purpose flour
  • 1 tbsp pumpkin pie spice
  • 3/4 cup unsalted butter (softened)
  • 1 cup light brown sugar
  • 2 egg yolks
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Prepare the cheesecake filling by mixing cream cheese, granulated sugar, and vanilla until smooth. Set aside.
  2. In another bowl, combine pumpkin puree, granulated sugar, and pumpkin pie spice. Mix in flour, baking powder, baking soda, salt, softened butter, brown sugar, egg yolks, and vanilla until a dough forms.
  3. Preheat the oven to 350°F (175°C). Flatten tablespoon-sized cookie dough in your hand; place a teaspoon of cheesecake filling in the center and fold dough around it to form a ball.
  4. Place on a lined baking sheet and bake for about 12 minutes until edges are set but centers remain soft. Cool on wire racks.
