  • 1 cup (240g) milk
  • 2 cups (250g) flour
  • 2 large eggs
  • 1/4 cup (50g) sugar
  • 5 small/medium soft apples
  • Powdered sugar (for dusting)

Instructions

  1. Warm the milk to 100-110°F and mix it with yeast and 1 tablespoon of sugar; let sit until foamy.
  2. Combine the milk-yeast mixture with flour, eggs, remaining sugar, vanilla, cinnamon, and salt in a large bowl; mix until smooth.
  3. Cover the batter and let it rise in a warm place until doubled in size (about 45-70 minutes).
  4. Peel and cube apples while waiting for the batter.
  5. Fold apple cubes into the risen batter and let it rest for another 10-30 minutes.
  6. Heat oil in a non-stick pan over medium heat; spoon batter into the pan to form pancakes.
  7. Cook until puffy and golden brown; serve hot dusted with powdered sugar.
