  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 oz (450 g) cream cheese, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ½ cup sour cream, room temperature
  • 1½ cups fresh peaches, peeled & sliced
  • ½ cup all-purpose flour
  • ½ cup granulated sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 6 Tbsp cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until evenly moistened. Press this mixture firmly into the bottom of your prepared baking pan.
  3. In a large bowl, beat together cream cheese and sugar until smooth. Add in each egg one at a time while mixing until fully incorporated. Stir in vanilla extract and sour cream. Pour this creamy filling over your crust layer.
  4. In another bowl, combine sliced peaches, flour, sugar, cinnamon, and nutmeg. Gently toss to coat the peaches with dry ingredients. Evenly sprinkle this peach mixture over your cheesecake filling. Dot the top with pieces of cold butter.
  5. Bake in your preheated oven for 45-50 minutes or until the cheesecake is set and golden brown on top. Let cool completely before cutting into bars.
