  • 6 teaspoons light brown sugar
  • 3 fresh peaches
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2/3 cup granulated sugar
  • 1/3 cup unsalted butter (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup buttermilk (room temperature)

Instructions

  1. Preheat your oven to 350°F (177°C) and spray muffin pan with non-stick cooking spray.
  2. In a small bowl, mix cold butter with light brown sugar. Slice peaches and distribute them evenly in muffin cups; top with the butter-sugar mixture.
  3. Whisk together flour, baking powder, baking soda, and salt in one bowl. In another bowl, cream granulated sugar and room temperature butter until fluffy.
  4. Add egg and vanilla to the butter mixture; mix well.
  5. Gradually add dry ingredients alternately with buttermilk to the wet ingredients until just combined.
  6. Spoon the batter over peach topping in muffin cups and bake for about 30 minutes or until golden and a toothpick comes out clean.
  7. Cool for 10 minutes before flipping onto a wire rack.
