  • 100 g (½ cup) granulated sugar
  • 1 tsp vanilla sugar or extract
  • 100 ml (⅓ cup + 1½ tbsp) whole milk
  • 20 g (1½ tbsp) unsalted butter, melted and cooled
  • 80 g (⅔ cup) all-purpose flour
  • 1 tsp baking powder
  • Pinch of fine sea salt
  • Zest of 1 unwaxed lemon
  • 45 medium apples (approximately 750 g/1.65 lbs)
  • Juice of ½ fresh lemon
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, whisk together the eggs, granulated sugar, and vanilla until blended.
  3. Add the milk and melted butter; mix until smooth.
  4. In another bowl, combine flour, baking powder, and salt. Gradually stir this into the wet ingredients until just combined.
  5. Peel and core apples, slice thinly, and toss with lemon juice.
  6. Grease your baking pan and pour half of the batter in it. Layer sliced apples over the batter and top with remaining batter.
  7. Bake for about 40-45 minutes or until golden brown.
  8. Allow to cool for 10 minutes before dusting with powdered sugar and serving.
