  • 1 stick (8 tablespoons) salted butter
  • 1 cup all-purpose flour
  • 1 cup brown sugar (light or dark)
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 1 cup milk
  • 1 tablespoon vanilla extract
  • 56 peaches, cut into wedges
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 375°F. Place cubed butter in a 9×13 inch baking dish and melt in the oven for about 10 minutes.
  2. In a mixing bowl, combine flour, 3/4 cup brown sugar, baking powder, cinnamon, and salt. Stir in milk and vanilla until just combined.
  3. In another bowl, toss peach wedges with remaining brown sugar and maple syrup until coated.
  4. Layer half of the peaches over melted butter in the baking dish. Pour batter over without stirring, then add remaining peaches on top.
  5. Bake for 50-55 minutes until edges are golden brown and center is set.
  6. For an optional maple butter drizzle, boil together butter and maple syrup for 2 minutes while the cobbler bakes.
  7. Serve warm or at room temperature with ice cream or whipped cream.
