  • 1 cup sugar
  • 1/4 cup + 2 tbsp cocoa powder
  • 1 tsp baking soda
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 8 oz cream cheese
  • Strawberry and vanilla extracts
  • Cool Whip (or homemade whipped cream)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, mix flour, sugar, cocoa powder, and baking soda. Add egg, buttermilk, oil, and vanilla; mix until smooth. Gradually stir in boiling water.
  3. Divide batter into prepared pans and bake for 30–40 minutes until a toothpick comes out clean. Cool completely.
  4. For the strawberry layer: Beat cream cheese with sugar and milk; fold in Cool Whip. Repeat for the vanilla layer using vanilla extract.
  5. Assemble by layering one cake with strawberry mixture, topping with the second cake and vanilla mixture.
  6. Frost the top with the remaining whipped cream and freeze for at least two hours before serving.
