Lasagna Soup is a comforting and flavorful twist on the classic lasagna, perfect for cozy family dinners or casual gatherings. This hearty dish combines all the beloved flavors of traditional lasagna in a warm, satisfying soup that can be ready in just 45 minutes.

  • 12 tablespoons Olive Oil
  • 1 pound Ground Beef
  • 1 large Onion (diced)
  • 4 cloves Garlic (minced)
  • 1 (15-ounce can) Diced Tomatoes
  • 1 (15-ounce can) Tomato Sauce
  • 4 cups Chicken Broth
  • 8 ounces Bowtie Pasta (uncooked)
  • 1/2 cup Ricotta Cheese
  • 2 ounces Mozzarella Cheese (shredded)
  • 1/4 cup Parmesan Cheese (shaved or grated)
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Sea Salt
  • Black Pepper (to taste)
  • 12 cups Water (to adjust consistency)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onions and minced garlic until softened. Add ground beef and cook until browned.
  2. Stir in diced tomatoes, tomato sauce, and then pour in chicken broth. Adjust consistency with water as needed.
  3. Season with Italian seasoning, salt, and pepper; bring to a boil and then simmer for 15 minutes.
  4. Add bowtie pasta and cook until al dente according to package instructions.
  5. Remove from heat and stir in ricotta cheese until combined; top with mozzarella and Parmesan cheeses.
  6. Serve hot and enjoy!
