  • 120g gluten-free flour
  • 360g apples (peeled and diced)
  • 150g firm tofu
  • 100g cashews (soaked)
  • 480ml water
  • 85g maple syrup
  • 20g brown sugar

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare a baking dish.
  2. For the crust, mix gluten-free flour, ground almonds, sugar, salt, and add flaxseed eggs and vegan butter. Press into the baking dish.
  3. For the apple filling, combine diced apples with lemon juice in a pot, then add water and sugar. Cook until thickened.
  4. Blend tofu and soaked cashews until smooth, incorporating coconut milk, maple syrup, lime juice, vanilla extract, and cornstarch.
  5. Layer the apple filling over the crust followed by the cheesecake mixture. Bake for about 45 minutes.
  6. Prepare the caramel topping by heating all ingredients until thickened.
  7. Drizzle caramel over cooled cheesecake before serving.
