  • 2 ½ cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 2 sticks (8 oz) unsalted butter, very cold
  • 69 tablespoons ice water
  • 2 large honey crisp apples
  • 18 oz fresh blackberries
  • 1/4 cup raw or turbinado sugar
  • 3 tablespoons salted butter
  • 2 tablespoons fruit juice or vinegar
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 1/3 cup granulated sugar

Instructions

  1. Make the crust by combining flour, sugar, and salt in a stand mixer. Add cold butter and mix until crumbly. Gradually add ice water until dough forms. Chill for at least one hour.
  2. Prepare the apple filling by cooking diced apples with butter, fruit juice, vanilla, cinnamon, and brown sugar until syrupy. Cool.
  3. Roast blackberries with sugar and vanilla until thickened; cool.
  4. Roll out chilled dough to 1/8 inch thickness and cut out pumpkin shapes. Refrigerate cutouts briefly.
  5. Assemble pies by adding filling to uncut pieces, sealing with egg wash and cutouts on top.
  6. Bake at 375°F (190°C) for about 25 minutes until golden brown.
