  • 4 chicken drumsticks
  • 4 medium potatoes, peeled & cubed
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp ground black pepper
  • Salt to taste
  • Fresh parsley, chopped

Instructions

  1. Preheat your oven to 200C (400F).
  2. In a large bowl, combine chicken drumsticks, olive oil, paprika, oregano, garlic powder, salt, and pepper. Toss until the chicken is well coated.
  3. In another bowl, mix cubed potatoes, sliced carrots, bell pepper, onion with olive oil, paprika, salt, and pepper.
  4. Spread seasoned vegetables in a baking dish and place the chicken on top.
  5. Roast in the preheated oven for 50-55 minutes or until chicken is golden brown and cooked through.
  6. Garnish with chopped parsley before serving hot.
