  • 1 Tbsp. olive oil
  • 1 medium yellow onion; diced
  • 4 tsp. garlic; minced
  • 1 lb. ground turkey
  • 1 Tbsp. brown sugar
  • 2 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup tomato paste
  • 4 cups beef broth
  • 28 ounce can fire roasted crushed tomatoes
  • 15 ounce can kidney beans; rinsed and drained
  • 15 ounce can black beans; rinsed and drained
  • 15 ounce can pinto beans; rinsed and drained

Instructions

  1. In a Dutch oven or large pot, heat olive oil over medium-high heat. Add diced onions and minced garlic; sauté for 3-4 minutes until softened.
  2. Stir in the ground turkey, breaking it apart as it cooks for about 5-7 minutes until fully cooked.
  3. Mix in brown sugar, chili powder, cumin, oregano, salt, pepper, and tomato paste; combine well.
  4. Pour in beef broth and add crushed tomatoes and rinsed beans. Stir thoroughly to incorporate all ingredients.
  5. Bring to a boil, then reduce heat. Cover and let simmer for 30 minutes, stirring frequently. Add water if needed for desired consistency.
