  • 1/2 cup pure maple syrup

  • 1 cup chocolate chips

  2. In a large bowl, mix together pumpkin puree, eggs, maple syrup, oil, and vanilla extract until well combined.
  3. In another bowl, whisk together gluten-free flour, pumpkin pie spice, baking soda, and salt.
  4. Gradually add the dry mixture to the wet ingredients and stir until just combined. Gently fold in the chocolate chips.
  5. Fill muffin tins two-thirds full with batter and bake for 24-27 minutes or until a toothpick comes out mostly clean.
  6. Allow muffins to cool before serving.
