  • 1 cup instant oats
  • ¾ cup whole wheat flour or gluten-free flour
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp coconut oil or unsalted butter (melted)
  • 1 large egg
  • 1 tsp almond extract
  • ¼ cup pure maple syrup
  • 6 tbsp unsweetened vanilla almond milk
  • ½ cup diced peaches

Instructions

  1. In a medium bowl, combine oats, flour, cinnamon, nutmeg, baking powder, and salt.
  2. In another bowl, mix melted coconut oil or butter with egg and almond extract. Stir in maple syrup and almond milk until smooth.
  3. Gradually add the dry mixture to the wet ingredients and fold in diced peaches.
  4. Chill the cookie dough for 30 minutes.
  5. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  6. Scoop rounded tablespoons of dough onto the sheet, flattening each one slightly.
  7. Bake for 9-12 minutes until golden around the edges. Cool before serving.
