  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Juice of lemon
  • Salt & pepper to taste
  • 1 small head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • Cucumber, sliced
  • Red onion, thinly sliced
  • 1 cup feta cheese, cubed
  • 1 cup Greek yogurt
  • Cucumber, grated & squeezed dry
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • Juice of lemon
  • Salt & pepper to taste

Instructions

  1. Marinate the chicken by mixing olive oil, minced garlic, oregano, lemon juice, salt, and pepper. Coat the chicken and let it sit while you prep other ingredients.
  2. Grill or pan-sear the marinated chicken over medium-high heat for 5–7 minutes on each side until fully cooked (internal temperature of 165°F/75°C). Let rest before slicing.
  3. Prepare tzatziki by combining Greek yogurt, grated cucumber (squeezed dry), minced garlic, dill, lemon juice, salt, and pepper in a bowl.
  4. Assemble the salad by layering chopped romaine lettuce, cherry tomatoes, cucumber slices, red onion, cubed feta cheese, and sliced grilled chicken. Top with tzatziki.
