  • 3/4 cup corn or vegetable oil
  • 3 large eggs
  • 1 cup sugar
  • 2 cups gluten-free flour blend
  • Spices: cinnamon, ginger, nutmeg, cloves
  • For streusel: brown sugar, gluten-free flour blend, cinnamon, butter
  • For maple glaze: powdered sugar, maple syrup

Instructions

  1. Preheat your oven to 350°F and prepare a loaf pan with parchment paper.
  2. In one bowl, whisk together pumpkin puree, oil, eggs, and sugars until smooth.
  3. In another bowl, mix the gluten-free flour and spices.
  4. Combine wet and dry ingredients; pour into the loaf pan.
  5. Prepare the streusel topping by mixing the ingredients until crumbly; sprinkle on top of the batter.
  6. Bake for 60–80 minutes or until a toothpick comes out clean.
