  • 1 salmon fillet
  • 1 ripe plantain, sliced
  • 1 cup fresh spinach
  • 1 avocado, sliced
  • 1 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • Salt, pepper, and chili flakes to taste

Instructions

  1. Season the salmon fillet with salt, pepper, and chili flakes. Heat olive oil in a non-stick frying pan over medium heat. Sear the salmon skin-side down for 4-5 minutes until golden brown. Flip the salmon, glaze with honey or maple syrup, and cook for another 4-5 minutes until caramelized.
  2. In another pan, lightly fry sliced plantains in oil over medium heat until golden brown on both sides (about 3-4 minutes per side). Drain on paper towels and sprinkle with sea salt.
  3. In the same pan used for plantains, sauté spinach in a dash of oil for 2-3 minutes until wilted. Optionally add minced garlic or lime juice.
  4. Assemble by plating the glazed salmon alongside fried plantains, sautéed spinach, and sliced avocado.
