  • 4 salmon fillets
  • 300g baby potatoes
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1 tbsp fresh parsley, chopped
  • Salt & pepper to taste
  • 1 lemon wedge for serving

Instructions

  1. Preheat the oven to 200C (400F). Toss baby potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes until golden brown.
  2. Season the salmon fillets with salt and pepper. Heat the remaining olive oil in a skillet over medium heat, then sear the salmon for 3-4 minutes on each side until cooked through.
  3. In the same skillet, add broccoli florets and cherry tomatoes; sauté for about 3-4 minutes until bright green and slightly blistered.
  4. For the garlic butter, melt butter in a small pan over low heat. Add minced garlic and cook for about 1 minute. Stir in parsley.
  5. To serve, place salmon on plates with roasted potatoes and sautéed veggies. Drizzle with garlic butter and add lemon wedges.
