  • small bunch fresh sage
  • 1 large head of garlic
  • 2/3 cup olive oil (or preferred vegetable oil)
  • 1 large egg (separated)
  • 1 tsp Dijon mustard
  • pinch salt

Instructions

  1. Heat chicken stock and sage in a large Dutch oven until simmering.
  2. Peel garlic cloves, halve them, and remove the green shoot.
  3. Boil garlic in water for 3-4 minutes, then drain.
  4. Mash the softened garlic until finely crushed and add to the simmering stock; cook for another 10 minutes.
  5. In a jar, combine egg yolk, mustard, salt, and oil; blend using an immersion blender until emulsified.
  6. Optionally strain the soup for smoothness before stirring in the mayonnaise mixture.
  7. Gently heat without boiling before serving hot.
