Instructions
Preheat your oven to 350°F (175°C) and grease three round cake pans.
In a bowl, whisk together the cake flour, cocoa powder, baking soda, and salt until well combined.
In a separate mixing bowl, beat the unsalted butter with granulated sugar using an electric mixer until light and fluffy. This should take about 5 minutes.
Add eggs one at a time to the butter mixture. Mix well after each addition. Then add buttermilk, oil, vanilla extract, vinegar, and green gel food coloring. Mix until just combined.
Gradually add the dry ingredients to the wet ingredients. Mix on low speed until everything is incorporated and no lumps remain.
Divide the batter evenly between the prepared pans. Bake in preheated oven for about 28 minutes or until a toothpick comes out clean. Let them cool completely before frosting.
While cakes are cooling, prepare your buttercream by beating together unsalted butter and cream cheese. Gradually add powdered sugar while mixing on low speed. Add salt and whipping cream for desired consistency.
Level off your cooled cake layers if necessary. Place one layer on the greaseproof cake board. Spread an even layer of cream cheese buttercream on top before adding the next layer. Repeat until all layers are stacked.
Use an offset spatula to apply a thin crumb coat over the entire cake. Chill for about 30 minutes before applying a thicker layer of frosting for decoration.
Using piping bags fitted with different tips, decorate your Frankenstein cake with black gel food coloring for details like eyes or stitches. Use electric green gel food coloring for fun accents!
