  • 1 medium onion (diced)
  • 1 jalapeno pepper (diced)
  • 3 1/2 cups vegetable broth
  • 15 ounces black beans (drained & rinsed)
  • 15 ounces red beans (drained & rinsed)
  • 3/4 cup dried red lentils
  • 15 ounces tomato sauce
  • 1 red bell pepper (diced)
  • 3/4 cup salsa
  • 1/2 cup light cream cheese
  • Spices: smoked paprika, garlic powder, cumin, cayenne pepper (optional)
  • Crushed tortilla chips for garnish

Instructions

  1. Prep the vegetables by dicing the onion and bell pepper. Drain and rinse the black and red beans.
  2. In the slow cooker, combine the diced onion, jalapeno pepper, corn, red lentils, tomato sauce, diced bell pepper, salsa, black beans, red beans, spices, cream cheese, salt, and pepper.
  3. Pour vegetable broth over the mixture.
  4. Cover and cook on low for about 6 hours or until lentils are tender.
  5. Stir well before serving hot with crushed tortilla chips on top.
