  • 12 oz rigatoni pasta
  • 4 oz cream cheese
  • 1 cup heavy cream
  • 1 cup Velveeta cheese
  • Cajun seasoning
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp garlic powder
  • Salt & black pepper to taste
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup whole milk
  • 1 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil rigatoni in salted water until al dente (10-12 minutes). Reserve ½ cup of pasta water, then drain.
  2. In a skillet, heat olive oil and butter over medium-high heat. Season and cook the chicken until golden brown (6-8 minutes). Set aside.
  3. In the same skillet, melt butter, sauté minced garlic, then stir in heavy cream and milk until warm. Add cream cheese and whisk until smooth.
  4. Mix in Parmesan, mozzarella, and Velveeta until melted. Adjust thickness with reserved pasta water if needed.
  5. Toss rigatoni with sauce; add chicken back in or serve on top.
  6. Garnish with chopped parsley before serving.
