  • 34 lbs ripe organic tomatoes, cut into wedges
  • 2 garlic bulbs
  • 1/2 onion, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream (or coconut cream for a vegan option)
  • 2 cups organic vegetable stock
  • 4 Tbsp organic tomato paste
  • 1 tsp sea salt (plus more to taste)
  • 1 tsp On Everything All-Purpose Blend
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat oven to 400°F (200°C). Place tomatoes and whole garlic bulbs on a baking sheet; drizzle with olive oil and sprinkle with salt. Roast for about 30 minutes.
  2. In a large pot over medium heat, sauté chopped onion until translucent (about 5 minutes).
  3. Once roasted, squeeze garlic into the pot; add tomatoes, their juices, vegetable stock, tomato paste, salt, and seasonings.
  4. Bring to a gentle boil; reduce heat and simmer for 10 minutes. Blend until smooth using an immersion blender.
  5. Return soup to low heat; stir in heavy cream (or coconut cream) until combined. Adjust seasoning as needed.
