  • 2 medium carrots
  • 14 oz young potatoes
  • 1 tablespoon butter
  • 79 oz heavy cream
  • 3235 oz vegetable or meat-based stock
  • 1 tablespoon lemon juice
  • 1 large bunch fresh dill
  • Salt and pepper to taste

Instructions

  1. Peel and dice the onion and potatoes; grate the carrots.
  2. Sauté onions in butter until translucent.
  3. Add potatoes and carrots; fry for 2-3 minutes.
  4. Pour in stock and simmer for 20 minutes until potatoes soften.
  5. Blend part of the soup with cream until smooth, then return to pot.
  6. Stir in chopped dill, lemon juice, nutmeg, salt, and pepper; cook for an additional 3-4 minutes.
  7. Adjust seasoning as needed and serve hot with optional garnishes.
