Creamy Chicken Pasta with Spinach is a delightful one-pot dish that combines tender chicken and fresh spinach in a rich, creamy sauce, perfect for busy weeknights or special gatherings.

  • 2 tbsp olive oil
  • 1 lb boneless chicken breast or thighs, cut into bite-sized pieces
  • Salt and black pepper, to taste
  • 4 garlic cloves, minced
  • 3 cups baby spinach, packed
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne or fusilli pasta
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese

Instructions

  1. In a large pot or deep skillet over medium heat, add olive oil. Season chicken pieces with salt and pepper. Cook until golden brown (5–7 minutes), then add minced garlic and sauté for an additional minute.
  2. Stir in chopped turkey bacon and cook until crispy (3–4 minutes).
  3. Add baby spinach; stir until wilted. Pour in chicken broth and bring to a simmer.
  4. Lower heat; stir in heavy cream and let it cook gently for 2–3 minutes.
  5. Stir in uncooked penne or fusilli pasta. Cover and cook according to package instructions until al dente.
  6. Once cooked, mix in shredded mozzarella and Parmesan cheese until melted.
