  • 1 medium onion, diced
  • 1 lb mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 cups dairy-free milk
  • 3 cups vegetable broth
  • 2 (15 oz.) cans white beans, drained and rinsed
  • 1 lb baby potatoes, cubed
  • Fresh parsley for garnish

Instructions

  1. In a large pot or Dutch oven, melt vegan butter over medium heat. Sauté diced onion until translucent.
  2. Add sliced mushrooms, garlic, thyme, rosemary, salt, and pepper. Cook until mushrooms are browned.
  3. Stir in cornstarch, tamari (or soy sauce), and Dijon mustard.
  4. Pour in vegetable broth and add cubed potatoes. Bring to a boil then simmer uncovered for 15-20 minutes until potatoes are tender.
  5. Mix in white beans and dairy-free milk; simmer for an additional 10-15 minutes until thickened.
  6. Adjust seasoning if necessary, garnish with parsley, and serve warm.
