  • 1.5 lbs beef chuck, cut into cubes
  • 2 tbsp vegetable oil
  • 1 large yellow onion, sliced
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup beef broth
  • Juice of lime
  • 1 cup jasmine rice

Instructions

  1. Prepare all ingredients by cutting the beef, slicing onion, mincing garlic, and grating ginger.
  2. In a Dutch oven, heat vegetable oil over medium-high heat. Season beef with salt and pepper; sear in batches until browned.
  3. Remove beef and set aside. In the same pot, sauté onions until translucent; add garlic and ginger.
  4. Stir in curry paste and turmeric; pour in coconut milk and broth, mixing well.
  5. Return beef to the pot, bring to a simmer, cover, and braise on low for about 90 minutes or until tender.
  6. Rinse jasmine rice under cold water; cook according to package instructions.
  7. Serve braised beef over rice with warmed naan.
