  • 1 1/2 cups Cake Flour
  • 2 tsp corn starch
  • 1 tsp baking soda
  • 1 tsp baking powder

  • 1 cup cold unsalted butter, cubed
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup packed brown sugar
  • 6 Tbsp softened butter
  • 2 Tbsp cinnamon
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix brown sugar, softened butter, and cinnamon to create the filling. Set aside.
  3. In a large bowl, whisk together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. In a stand mixer bowl, cream cold unsalted butter until smooth; then add granulated sugar and mix well.
  5. Incorporate eggs and vanilla extract into the butter mixture.
  6. Gradually add the dry ingredients until fully combined.
  7. Roll the dough into a rectangle and spread the cinnamon filling evenly over it.
  8. Roll up the dough tightly and slice into cookies.
  9. Bake for 9–11 minutes until edges are golden brown and cool on a rack.
  10. For frosting: blend cream cheese with softened butter, confectioners sugar, vanilla extract, and salt until smooth; frost cooled cookies.
