  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • Sour cream, green onions, diced tomatoes, black olives, and cilantro for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub and pierce each potato several times with a fork. Rub olive oil and season with salt and pepper.
  3. Place the potatoes on a baking sheet and bake for about 45 minutes until tender.
  4. While baking, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  5. Stir in taco seasoning with water as per packet instructions; simmer for 5 minutes.
  6. Once baked, cut a slit in each potato and fill with the beef mixture followed by shredded cheddar cheese.
  7. Return to the oven for an additional 5 minutes or until the cheese is melted.
  8. Top with sour cream, green onions, diced tomatoes, black olives, and cilantro before serving.
