Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic
  • 1/2 cup butter
  • 1 pound Velveeta cheese
  • 1 pound bowtie pasta
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the bowtie pasta according to package instructions in salted boiling water until al dente, then drain.
  2. In a large skillet, heat olive oil over medium-high heat. Add bite-sized chicken pieces seasoned with Cajun seasoning and paprika; cook until golden brown and fully cooked (about 6-8 minutes). Remove from skillet and set aside.
  3. In the same skillet, melt butter over medium heat and add minced garlic; sauté for about one minute. Whisk in flour to create a roux.
  4. Gradually whisk in milk until smooth; bring to a simmer while stirring constantly. Lower heat and add cubed Velveeta cheese, mozzarella, and Parmesan; stir until melted.
  5. Combine the cooked pasta and sautéed chicken into the cheese sauce, mixing well until heated through.
