  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Season chicken with salt, pepper, and garlic powder.
  3. In a large skillet, heat olive oil over medium-high heat and brown the chicken for about 4 minutes.
  4. In a mixing bowl, whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ground ginger, and cornstarch until smooth.
  5. Transfer browned chicken to the baking dish and pour the pineapple chunks and glaze on top.
  6. Cover with foil and bake for 25–30 minutes until cooked through.
