  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 8 oz cream cheese (room temperature)

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and salt; set aside.
  3. In a large bowl, mix the pumpkin puree with granulated and brown sugars until smooth; beat in eggs one at a time. Add oil and vanilla; mix well.
  4. Gradually stir in the dry ingredient mixture until just combined.
  5. In another bowl, beat cream cheese until smooth; mix in sugar, egg yolk, and vanilla.
  6. Fill muffin cups about 3/4 full with batter, then add a tablespoon of cream cheese mixture on top and swirl gently with a toothpick.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
