  • 2 large eggs
  • 1/2 cup vegetable oil (or melted and cooled butter)
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar (for filling)

Instructions

  1. Preheat oven to 375°F (190°C) and line muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Mix until smooth.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. In another bowl, beat cream cheese with sugar, egg yolk, and vanilla until smooth.
  6. Fill muffin cups 3/4 full with pumpkin batter and top with cream cheese mixture; swirl gently with a toothpick.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
