  • 2 salmon fillets (150-180g each)
  • 1 tsp Cajun seasoning (or smoked paprika + chili powder)
  • Salt and black pepper, to taste
  • 3 tbsp olive oil
  • 2 cups baby potatoes, halved
  • 2 cloves garlic, minced
  • Chopped parsley (for garnish)
  • 1 bunch asparagus, trimmed
  • 1 cup shredded mozzarella (or Italian blend)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss halved baby potatoes with olive oil, minced garlic, salt, and pepper. Spread on a baking tray and roast for 25-30 minutes until golden and crispy.
  3. On another tray, place trimmed asparagus, drizzle with olive oil, season with salt and pepper, and bake for 12-15 minutes. Add cheese in the last 5 minutes until melted.
  4. Season salmon fillets with Cajun seasoning, salt, pepper, and olive oil. Bake alongside the vegetables for about 12-15 minutes until cooked through.
  5. Serve by layering the potatoes on the plate, topping them with cheesy asparagus, and placing a salmon fillet alongside.
