  • 2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • ½ cup unsalted butter (room temperature)
  • ¼ cup sour cream
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a muffin tin with paper liners.
  2. In a medium bowl, mix together ¾ cup all-purpose flour, ¼ cup light brown sugar, 2 tablespoons granulated sugar, and 1 teaspoon ground cinnamon. Add melted butter until clumps form; set aside.
  3. In another bowl, whisk together 2 cups all-purpose flour, 1½ teaspoons baking powder, ½ teaspoon salt, 1 tablespoon ground cinnamon, and ½ teaspoon ground nutmeg.
  4. In a large bowl, beat together ½ cup light brown sugar and ¼ cup granulated sugar with ½ cup unsalted butter until fluffy. Add in 2 eggs, ¼ cup sour cream, and 1 teaspoon vanilla extract; mix well.
  5. Gradually add half of the flour mixture followed by ½ cup milk; mix until combined. Fold in remaining flour mixture and gently stir in diced apples.
  6. Fill muffin cups about three-quarters full with batter and sprinkle crumble mixture on top.
  7. Bake for about 20 minutes or until a toothpick comes out clean. Cool briefly before transferring to a wire rack.
